Jamie Oliver Salmon Filo Pie is a baked savory pie made with chunks of salmon combined with a creamy sauce and wrapped in thin, layered filo pastry. The pastry turns crisp and golden in the oven while the filling remains soft and flavorful.
Preheat your oven to 190°C (170°C fan). Lightly grease a baking dish.
Heat olive oil in a pan over medium heat. Add chopped onion and cook for 3–4 minutes until soft.
Add cream, Dijon mustard, lemon zest, salt, and pepper to the pan. Stir gently. If using spinach, add it and cook until wilted. Remove from heat and fold in salmon chunks.
Lay one sheet of filo in the dish and brush lightly with melted butter or oil. Repeat layering and brushing until half the sheets are used.
Spoon the salmon mixture evenly over the filo layers.
Layer the remaining filo sheets on top, brushing each with butter or oil. Tuck edges neatly inside the dish.
Bake for 30–35 minutes until the pastry is golden brown and crisp.
Let the pie rest for 5–10 minutes before slicing. This helps the filling set slightly.
