Jamie Oliver’s vegetable casserole is a slow-baked dish where mixed vegetables are cooked in a savory sauce, often with herbs and stock, resulting in a rich and hearty plant-based meal.

Ingredients

    • 1 onion (chopped)

    • 2 cloves garlic (minced)

    • 2 carrots (sliced)

    • 2 potatoes (cubed)

    • 1 zucchini (sliced)

    • 1 bell pepper (chopped)

    • 1 can (400g) chopped tomatoes

    • 250ml vegetable stock

    • 2 tablespoons olive oil

    • 1 teaspoon dried thyme or mixed herbs

    • Salt and pepper (to taste)

Optional additions:

    • Mushrooms

    • Green beans

    • Chickpeas or lentils

    • Grated cheese (for topping)

Instructions

Step 1: Preheat the Oven

Preheat your oven to 180°C (350°F).

Step 2: Start the Base

Heat olive oil in a large oven-safe pan. Add onion and cook until softened.

Step 3: Add Aromatics

Stir in garlic and cook briefly until fragrant.

Step 4: Add Vegetables

Add carrots, potatoes, zucchini, and bell pepper. Stir well.

Step 5: Build the Sauce

Add chopped tomatoes, vegetable stock, and herbs. Mix everything together.

Step 6: Bring to Simmer

Let it simmer for 5–10 minutes on the stovetop.

Step 7: Bake

Transfer to the oven and bake for 35–40 minutes until vegetables are tender.

Step 8: Serve

Remove from oven, adjust seasoning, and serve warm.
