Jamie Oliver’s Turkey Mulligatawny Soup is a curry-inspired soup made with leftover turkey, vegetables, warming spices, apple, and rice or lentils. It’s simmered until thick, aromatic, and full of comforting flavours.
Heat oil or butter in a pot, then cook the onion, carrots, celery, garlic, and ginger for 5–7 minutes until softened and fragrant.
Stir in the chopped apple, curry powder, and turmeric. Cook for 1–2 minutes to release the spices’ aroma.
Stir in the lentils or rice so they coat in the spice mixture.
Add the chicken or turkey stock and bring to a gentle boil. Add the bay leaf.
Let the soup simmer for 20–25 minutes until the lentils or rice are cooked through and the soup begins to thicken.
Stir in the shredded turkey and cook for another 5 minutes to warm it through.
Add coconut milk for a creamy finish or lemon juice for brightness. Garnish with fresh coriander and serve warm.
