Jamie Oliver’s Turkey Fricassee is a French-inspired dish where turkey pieces are lightly browned, then gently simmered in a creamy sauce made with stock, vegetables, and herbs. The result is tender meat coated in a smooth, savoury sauce that pairs well with mash, rice, or crusty bread.
Heat olive oil or butter in a wide pan over medium heat. Season the turkey lightly with salt and pepper, then brown it gently on all sides. Remove from the pan and set aside.
In the same pan, add the onion, carrot, and mushrooms. Cook for 6–8 minutes until softened and lightly golden, scraping up any flavour from the base of the pan.
Add garlic and cook briefly until fragrant. Sprinkle over the flour and stir well to coat the vegetables, cooking for 1 minute to remove the raw flour taste.
Gradually pour in the stock, stirring constantly to avoid lumps. Bring to a gentle simmer as the sauce thickens slightly.
Add the turkey back to the pan along with Dijon mustard. Simmer gently for 10–15 minutes until the turkey is tender and fully cooked.
Lower the heat and stir in the cream or crème fraîche. Season to taste and warm through gently without boiling.
Scatter over fresh herbs and serve hot with mashed potatoes, rice, or crusty bread.
