  • 34 ripe tomatoes (sliced)
  • 2 tablespoons olive oil
  • 1 clove garlic (optional, minced)
  • Salt and pepper (to taste)
  • Fresh herbs (basil or thyme)

Optional additions:

  • Grated cheese (cheddar, mozzarella, or parmesan)
  • Mustard or pesto (spread on base)
  • Caramelized onions

Instructions

Step 1: Preheat the Oven

Preheat your oven to 200°C (400°F).

Step 2: Prepare the Pastry

Roll out the puff pastry onto a baking tray lined with parchment paper.

Step 3: Score the Edges

Lightly score a border around the edges (about 1 cm) to help it rise evenly.

Step 4: Add Base Layer

Spread a thin layer of mustard or pesto if using. This adds flavor and prevents sogginess.

Step 5: Arrange Tomatoes

Lay sliced tomatoes evenly over the pastry within the border.

Step 6: Season and Drizzle

Sprinkle salt, pepper, garlic, and drizzle olive oil over the top.

Step 7: Add Cheese (Optional)

Sprinkle grated cheese for extra richness.

Step 8: Bake

Bake for 20–25 minutes until pastry is golden and crisp.

Step 9: Garnish and Serve

Top with fresh herbs and serve warm.
