    • 1 kg sweet potatoes, peeled and cubed

    • 1 tablespoon olive oil

    • 1 large onion, finely chopped

    • 2 cloves garlic, minced

    • 1 litre vegetable stock or chicken stock

    • Salt, to taste

    • Black pepper, to taste

    • Optional: pinch of chilli flakes or paprika for warmth

Instructions

Step 1: Prepare the sweet potatoes

Peel the sweet potatoes and cut them into evenly sized cubes. Keeping the pieces similar in size helps them cook evenly and blend smoothly later.

Step 2: Soften the onion

Heat olive oil in a large pot over medium heat. Add the chopped onion and cook slowly for 5–6 minutes until soft and translucent. This builds a gentle sweetness that supports the soup’s flavor.

Step 3: Add garlic and seasoning

Stir in the garlic and cook briefly until fragrant. Add a pinch of salt and optional spices at this stage to help release their aroma.

Step 4: Add sweet potatoes and stock

Add the sweet potato cubes to the pot and stir well so they’re coated in the onion mixture. Pour in the stock, bring to a gentle simmer, and cover.

Step 5: Simmer until tender

Cook for 18–20 minutes, or until the sweet potatoes are very soft and easily pierced with a fork. Proper softness is key for a creamy texture.

Step 6: Blend until smooth

Remove from heat and blend the soup until completely smooth using a hand blender or countertop blender. Blend patiently to remove any lumps.

Step 7: Final seasoning

Taste and adjust salt and black pepper as needed. Warm gently before serving if required.
