Jamie Oliver Sriracha Corn

Jamie Oliver Sriracha Corn is a simple corn dish where sweetcorn is cooked until tender and coated with a spicy butter mixture containing sriracha and fresh lime.

The combination of sweet corn, spicy chili sauce, creamy butter, and citrus creates a balanced flavor that’s particularly good alongside grilled or roasted food.

For the Corn

    • 4 fresh corn cobs

    • 2 tablespoons unsalted butter

    • 12 tablespoons sriracha sauce

    • 1 lime

    • 1 garlic clove, finely grated

    • Salt, to taste

    • Freshly ground black pepper

For Garnishing

    • Fresh coriander

    • Spring onions, finely sliced

    • Lime wedges

Optional Ingredients

    • 2 tablespoons grated Parmesan

    • 1 tablespoon mayonnaise

    • Smoked paprika

    • Chili flakes

    • Fresh red chili

    • Crumbled feta

    • Toasted sesame seeds

Instructions

Step 1: Prepare the Corn

Remove the husks and silk from each corn cob.

Rinse the corn briefly under cold water and pat it dry.

Step 2: Make the Sriracha Butter

Place the butter in a small bowl.

Add the sriracha, grated garlic, a squeeze of lime juice, a little lime zest, salt, and black pepper.

Mix until completely combined.

Taste the mixture and adjust the sriracha according to your preferred level of heat.

Step 3: Heat the Pan or Grill

Heat a large grill pan, frying pan, or barbecue over medium-high heat.

Allow the cooking surface to become properly hot before adding the corn.

Step 4: Cook the Corn

Place the corn cobs onto the hot surface.

Cook for approximately 10–15 minutes, turning every few minutes so they cook evenly.

The corn should become tender with golden or lightly charred patches.

Step 5: Add the Sriracha Butter

During the final few minutes of cooking, brush the corn generously with the sriracha butter.

Turn the cobs regularly so the butter coats all sides and develops a slightly caramelized exterior.

Step 6: Continue Cooking

Cook for another 1–2 minutes until the butter becomes glossy and the corn has developed a little extra color.

Be careful not to burn the garlic or sriracha.

Step 7: Finish With Lime

Remove the corn from the heat.

Squeeze fresh lime juice over each cob and add a little extra lime zest if desired.

Step 8: Garnish

Scatter fresh coriander and sliced spring onions over the corn.

Add Parmesan, feta, or sesame seeds if using.

Step 9: Serve Immediately

Serve the corn while hot.

Provide extra lime wedges and sriracha at the table for anyone who wants additional heat.
