Jamie Oliver’s soda bread is a quick bread made using baking soda as a leavening agent instead of yeast, resulting in a fast, easy loaf with a rustic texture.

  • 1 teaspoon salt
  • 400ml buttermilk (or milk + lemon juice)

  • Dried fruits (raisins or cranberries)

Instructions

Step 1: Preheat the Oven Properly

Preheat your oven to 200°C (400°F). A hot oven is essential for activating the baking soda and creating a good rise.

Step 2: Mix Dry Ingredients

In a large bowl, combine flour, baking soda, and salt. Stir well so the baking soda is evenly distributed throughout the flour.

Step 3: Add Buttermilk

Pour in the buttermilk gradually and mix with your hands or a spoon until a soft dough forms. The dough should be slightly sticky but manageable.

Step 4: Shape the Dough

Turn the dough onto a lightly floured surface and gently shape it into a round loaf. Avoid heavy kneading—just bring it together.

Step 5: Score the Top

Place the dough on a baking tray and cut a deep cross on top. This helps the bread cook evenly and gives it its traditional look.

Step 6: Bake the Bread

Bake for 30–35 minutes until the loaf is golden and sounds hollow when tapped on the bottom.

Step 7: Cool Before Slicing

Let the bread cool slightly before slicing. This allows the crumb to set properly.
