Jamie Oliver’s Slow Cooker Chicken Casserole is a one-pot recipe where chicken, vegetables, herbs, and broth gently simmer for hours until they form a rich, comforting stew. It’s a simplified version of a classic British casserole, adapted for slow cookers for convenience.

    • 800g chicken thighs or breast pieces

    • 3 carrots, sliced

    • 2 potatoes, diced

    • 2 celery sticks, chopped

    • 1 onion, finely chopped

    • 2 garlic cloves, minced

    • 1 cup chicken stock

    • 1 tbsp tomato paste

    • 1 tsp dried thyme

    • 1 tsp paprika

    • 1 bay leaf

    • Salt and black pepper, to taste

    • 1 tbsp olive oil

    • Optional: peas, mushrooms, parsley

Instructions

Step 1. Brown the Chicken for Extra Flavour (Optional but Recommended)

Heat a little oil in a pan and sear the chicken pieces until lightly golden. This step builds rich flavour and helps keep the chicken juicy during long cooking.

Step 2. Prepare the Vegetables

Chop the onions, carrots, potatoes, and celery into even pieces. Consistent size ensures they cook evenly and become tender without turning mushy.

Step 3. Add Everything to the Slow Cooker

Layer the chicken, vegetables, garlic, stock, tomato paste, thyme, paprika, bay leaf, salt, and pepper in the slow cooker. Stir lightly to combine everything.

Step 4. Slow Cook Until Tender

Cook on LOW for 6 hours or HIGH for 3–4 hours. The chicken becomes fall-apart tender while the vegetables soften and absorb flavour.

Step 5. Adjust and Finish

Add peas or mushrooms in the last 20 minutes if using. Check seasoning and sprinkle fresh parsley on top for a bright finish.

Step 6. Serve Warm

Ladle the casserole into bowls and serve with crusty bread, mashed potatoes, or rice.
