It typically features chicken cooked with tomatoes, olives, garlic, herbs, and citrus, resulting in a rich yet fresh sauce that coats the chicken without overpowering it.

Ingredients

    • Chicken thighs or drumsticks

    • Olive oil

    • Onion, finely sliced

    • Garlic cloves, lightly crushed

    • Tinned chopped tomatoes

    • Black or green olives, pitted

    • Lemon zest and juice

    • Fresh oregano or thyme

    • Salt and black pepper

Instructions

Step 1: Brown the Chicken

Heat olive oil in a large pan over medium heat. Season the chicken well and brown it on all sides until golden. This step adds depth and helps keep the chicken juicy during cooking. Remove the chicken and set it aside.

Step 2: Build the Flavour Base

In the same pan, add the sliced onion and cook gently until soft and lightly golden. Stir in the garlic and cook briefly until fragrant, keeping the heat moderate to avoid bitterness.

Step 3: Add Tomatoes and Olives

Pour in the chopped tomatoes and add the olives. Stir well, scraping up any browned bits from the pan. These bits add richness and deepen the sauce.

Step 4: Return the Chicken

Nestle the chicken back into the pan, making sure it’s partly submerged in the sauce. Add lemon zest and a small squeeze of lemon juice for brightness.

Step 5: Simmer Gently

Lower the heat, cover loosely, and simmer for 30–35 minutes until the chicken is tender and fully cooked. The sauce should thicken slightly and coat the chicken well.

Step 6: Finish and Rest

Scatter over fresh herbs and adjust seasoning with salt and black pepper. Let the dish rest for a few minutes off the heat so the flavours settle before serving.
