Jamie Oliver’s roast feta pasta is a baked pasta dish where feta cheese and tomatoes are roasted together, then mixed with cooked pasta to create a creamy, tangy sauce.
Optional additions:
Preheat your oven to 200°C (400°F).
Place cherry tomatoes in a baking dish. Add garlic, drizzle olive oil, and season with salt and pepper.
Place the block of feta in the center of the dish and drizzle a little olive oil on top.
Bake for 25–30 minutes until tomatoes are soft and feta is slightly golden.
While the feta is roasting, cook pasta according to package instructions. Reserve some pasta water.
Remove the baking dish and mash the feta and tomatoes together to form a creamy sauce.
Add cooked pasta to the dish and mix well. Add a splash of pasta water if needed for consistency.
Top with fresh basil or chili flakes and serve immediately.
