Jamie Oliver Pizza Sauce is a raw or lightly blended tomato sauce made specifically for pizza. It uses good-quality tomatoes, olive oil, garlic, and herbs to create a smooth, fresh base that cooks directly on the pizza in the oven.

  • 1 x 400 g tin good-quality chopped tomatoes or plum tomatoes
  • 1 clove garlic
  • 1 tablespoon extra virgin olive oil
  • Small bunch of fresh basil
  • Salt, to taste
  • Black pepper, to taste

Instructions

Step 1: Prepare the tomatoes

If using whole plum tomatoes, drain off excess liquid and crush them gently by hand or with a spoon. This keeps the sauce thick and prevents soggy pizza bases.

Step 2: Add garlic

Finely grate or mince the garlic and add it to the tomatoes. Use a light hand—pizza sauce should taste fresh, not aggressively garlicky.

Step 3: Blend lightly

Add olive oil, a pinch of salt, and a little black pepper. Blend briefly using a hand blender or food processor until smooth but not watery. A slightly textured sauce spreads better.

Step 4: Finish with basil

Tear the basil leaves by hand and stir them into the sauce. This keeps their aroma fresh and prevents bitterness.

Step 5: Taste and adjust

Taste the sauce and adjust seasoning if needed. The flavor should be slightly bold on its own, as it mellows once baked on the pizza.
