Jamie Oliver Peanut Butter Banana Yogurt Bark

Peanut Butter Banana Yogurt Bark is a frozen snack made by spreading Greek yogurt onto a tray, then topping it with sliced banana and peanut butter before freezing until firm.

The tanginess of the yogurt balances the sweetness of the banana, while peanut butter adds a rich, nutty flavor. Once frozen, the mixture is broken into pieces and enjoyed straight from the freezer.

For the Yogurt Bark

    • 500g Greek yogurt

    • 2 ripe bananas

    • 3 tablespoons smooth peanut butter

    • 1 tablespoon honey or maple syrup

    • 1 teaspoon vanilla extract

    • Pinch of salt

Optional Toppings

    • 50g dark chocolate chips

    • 2 tablespoons chopped peanuts

    • 2 tablespoons granola

    • 1 tablespoon shredded coconut

    • Fresh blueberries

    • Sliced strawberries

    • Melted dark chocolate

Instructions

Step 1: Prepare the Baking Tray

Line a large, flat baking tray with parchment paper.

Make sure the parchment covers the entire surface and that the tray can fit flat inside your freezer.

Step 2: Mix the Yogurt

Add the Greek yogurt to a large mixing bowl.

Stir in the honey or maple syrup, vanilla extract, and a small pinch of salt until smooth and evenly combined.

Taste the mixture before adding more sweetener. Very ripe bananas can provide plenty of sweetness.

Step 3: Spread the Yogurt

Pour the yogurt mixture onto the prepared baking tray.

Use a spatula to spread it evenly into a layer approximately 1–1.5cm thick.

Keeping the layer even helps the bark freeze consistently.

Step 4: Slice the Bananas

Peel the bananas and cut them into thin slices.

Arrange the banana slices evenly over the yogurt, gently pressing them into the surface.

Step 5: Prepare the Peanut Butter

If the peanut butter is too thick to drizzle, warm it very gently for a few seconds.

It should become easier to spread but should not become hot.

Step 6: Add the Peanut Butter

Drizzle the peanut butter over the banana and yogurt.

Use the tip of a knife or the back of a spoon to gently swirl it through the yogurt.

Don’t mix it completely because visible swirls create a better texture and appearance.

Step 7: Add the Toppings

Sprinkle over your chosen toppings, such as dark chocolate chips, chopped peanuts, granola, coconut, or berries.

Gently press larger toppings into the yogurt so they stay in place after freezing.

Step 8: Freeze the Bark

Place the tray flat in the freezer.

Freeze for at least 4 hours, or until completely firm.

For the best results, you can freeze the bark overnight.

Step 9: Remove From the Freezer

Take the tray from the freezer and let it stand at room temperature for approximately 2–3 minutes.

This makes it easier to remove the bark from the parchment.

Step 10: Break Into Pieces

Lift the frozen yogurt from the parchment paper.

Break it into irregular pieces with your hands or cut it into squares using a sharp knife.

Step 11: Serve

Serve the bark immediately while frozen.

If it starts becoming too soft, return the remaining pieces to the freezer.
