Jamie Oliver’s pea soup is a smooth vegetable soup made by gently cooking peas with onion and stock, then blending until velvety.
Unlike heavier pea soups, this version focuses on freshness and natural sweetness, keeping the texture light and the flavour clear and uncomplicated
Heat olive oil or butter in a saucepan over medium heat. Add the chopped onion and cook gently until soft and translucent. This creates a mild, sweet base without colouring the onion.
Stir in the garlic and cook briefly until fragrant. Keep the heat gentle so the garlic softens without browning, which helps maintain the soup’s clean flavour.
Add the peas to the pan, followed by enough stock to just cover them. Bring to a gentle simmer and cook for only 3–5 minutes. Overcooking dulls the colour and flavour, so keep this step short.
Remove the pan from the heat and blend the soup until smooth. The texture should be silky but not thick or gluey. Add more stock if needed to reach your preferred consistency.
Season with salt and black pepper, then stir through chopped mint or parsley. A small squeeze of lemon juice can be added to brighten the flavour just before serving.
