Jamie Oliver’s oven chips are potato wedges or sticks that are parboiled, coated lightly in oil, and roasted at high heat until crisp and golden.

    • 45 large potatoes (Maris Piper or Russet preferred)

    • 23 tablespoons olive oil

    • Salt (to taste)

    • Black pepper (optional)

Optional additions:

    • Garlic powder

    • Paprika

    • Fresh herbs (rosemary or thyme)

Instructions

Step 1: Preheat the Oven Properly

Preheat your oven to 200–220°C (400–430°F). High heat is essential to create a crisp outer layer.

Step 2: Cut the Potatoes Evenly

Peel (optional) and cut the potatoes into evenly sized chips or wedges. Uniform size ensures even cooking.

Step 3: Parboil the Potatoes

Place the cut potatoes in boiling salted water and cook for 5–7 minutes until slightly softened. This step helps create a fluffy interior.

Step 4: Drain and Roughen the Edges

Drain the potatoes and shake them gently in the pot to rough up the edges. This creates more surface area for crisping.

Step 5: Coat with Oil and Seasoning

Transfer the potatoes to a baking tray, drizzle with olive oil, and season with salt and spices. Toss to coat evenly.

Step 6: Roast Until Golden and Crisp

Spread the potatoes in a single layer and roast for 30–40 minutes, turning halfway through, until golden and crispy.

Step 7: Serve Immediately

Serve hot for the best texture and flavor.
