Jamie Oliver’s orange marmalade is a traditional citrus preserve made by simmering sliced oranges with sugar until thickened and glossy.
It balances sweetness with gentle bitterness from the peel, creating a classic British preserve.
Wash the oranges and lemons thoroughly. Halve them, squeeze out the juice, and reserve it. Thinly slice the peel, removing any thick white pith if needed.
Place the sliced peel into a large pot with the reserved juice and water. Simmer gently for 30–40 minutes until the peel becomes soft and translucent.
Stir in the sugar and continue cooking over low heat, stirring until the sugar fully dissolves and the liquid turns glossy.
Increase heat slightly and simmer until the marmalade thickens. Test for set by placing a small spoonful on a cold plate; it should wrinkle when pushed.
Remove from heat, skim any foam, and carefully spoon into sterilised jars. Seal while hot and allow to cool completely.
