Jamie Oliver’s Minestrone Soup is a rich, vegetable-based Italian-style soup that combines aromatic veggies, beans (such as cannellini), diced potato, tinned tomatoes, fresh greens and pasta, all simmered together until tender and delicious.
Heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add the garlic, onion and celery (and leek if using). Cook for 2-3 minutes until softened.
Stir in the diced carrots, celery and potato. Add the diced courgette now if you’re using it. Cook for about 10-15 minutes, stirring occasionally until the vegetables start to soften.
Pour in the tinned tomatoes (break them up with the back of your spoon), add the drained beans, then pour in the stock. Bring to a gentle boil and then reduce the heat and simmer for about 30 minutes until potato is tender.
At this point, stir in the chopped greens and the pasta. Cook for an additional 10 minutes, or until the pasta is al dente and the greens are tender. If the soup is too thick, add a little more stock or water.
Season with salt and pepper to taste. Serve in bowls with a generous grating of Parmesan cheese and a drizzle of olive oil. Add fresh basil leaves if you have them.
