Jamie Oliver’s Mexican chicken tacos feature seasoned chicken cooked with spices and served in soft or crispy tortillas with fresh toppings such as lettuce, tomatoes, avocado, salsa, and lime.
For the Chicken
In a large bowl, combine olive oil, paprika, cumin, chili powder, garlic powder, lime juice, salt, and pepper. Mix well until a paste forms.
Add the sliced chicken to the marinade and toss thoroughly. Let it sit for at least 15 minutes to absorb the flavors.
While the chicken marinates, shred the lettuce, chop the tomatoes, slice the avocado, and prepare any additional toppings.
Heat a large skillet over medium-high heat. Add the chicken and cook for 8–10 minutes, stirring occasionally, until golden and fully cooked.
Heat the tortillas in a dry pan for 20–30 seconds per side or warm them in the oven wrapped in foil.
Place a portion of chicken onto each tortilla. Top with lettuce, tomatoes, avocado, onion, and fresh coriander.
Add salsa, sour cream, cheese, or any preferred toppings. Finish with a squeeze of fresh lime juice.
Serve while the chicken is hot and the vegetables remain crisp and fresh.
