Jamie Oliver’s Mediterranean chicken stew is a one-pot dish made with chicken slowly cooked in a tomato-based sauce with olives, vegetables, garlic, and herbs.
It’s a warming, balanced stew that combines savoury richness with light acidity, inspired by southern European home cooking.
Heat olive oil in a large, heavy-based pot over medium heat. Season the chicken well and brown on all sides until golden. This step locks in flavour and adds depth to the stew. Remove the chicken and set it aside.
In the same pot, add the onion and cook gently until soft and lightly golden. Stir in the garlic and cook briefly until fragrant, keeping the heat moderate to avoid burning.
Add the bell pepper and courgette to the pot. Stir well and allow them to soften slightly, picking up flavour from the base of the pan.
Pour in the chopped tomatoes, then add olives, herbs, and bay leaf. Stir thoroughly, scraping up any browned bits from the bottom of the pot.
Place the chicken back into the pot, ensuring it’s partly submerged in the sauce. Lower the heat, cover loosely, and simmer gently for 35–40 minutes until the chicken is tender and fully cooked.
Taste and adjust seasoning with salt and black pepper. Let the stew rest for a few minutes off the heat so the flavours settle before serving.
