  • A handful of fresh parsley
  • A handful of fresh basil or mint

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (optional)
  • Salt, to taste
  • Freshly ground black pepper

Instructions

Step 1: Wash the Vegetables

Thoroughly wash all the lettuce leaves and vegetables under cold running water. Dry them well using a salad spinner or kitchen towel, as dry leaves allow the dressing to coat the salad evenly.

Step 2: Prepare the Lettuce

Tear the lettuce into bite-sized pieces instead of cutting it with a knife. This helps prevent bruising and keeps the leaves looking fresh and crisp.

Step 3: Slice the Vegetables

Slice the cucumber, radishes, red onion, and avocado. Halve the cherry tomatoes and roughly chop the fresh herbs.

Step 4: Make the Dressing

In a small bowl or jar, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and black pepper until smooth and slightly thickened.
