Jamie Oliver Lamb Soup is a slow-simmered soup made with lamb pieces, vegetables, and herbs cooked in a rich broth until tender and flavorful.

The result is a warming, nourishing soup with soft lamb and a deeply savory base.

You’ll need the following ingredients:

    • 400500 g lamb pieces (bone-in or boneless)

    • 2 tablespoons olive oil

    • 1 onion, chopped

    • 2 carrots, sliced

    • 2 celery stalks, chopped

    • 3 garlic cloves, minced

    • 1 liter lamb or beef stock

    • 1 potato, diced

    • 1 teaspoon fresh thyme or rosemary

    • 1 bay leaf

    • Salt and black pepper to taste

    • Fresh parsley for garnish

Instructions

Step 1 – Brown the Lamb

Heat olive oil in a large pot over medium-high heat. Add the lamb pieces and cook until browned on all sides. This step adds depth to the soup.

Step 2 – Cook the Vegetables

Add the onion, carrots, and celery to the pot. Cook for 5 minutes until softened. Stir in the garlic and cook for another minute.

Step 3 – Add Stock and Herbs

Pour in the stock, then add the bay leaf and herbs. Stir well.

Step 4 – Simmer the Soup

Bring the soup to a boil, then reduce heat and simmer gently for 40–50 minutes until the lamb becomes tender.

Step 5 – Add Potatoes

Add the diced potatoes and cook for another 15–20 minutes until they are soft.

Step 6 – Finish and Serve

Season with salt and pepper, remove the bay leaf, and garnish with fresh parsley before serving.
