    • 2 tablespoons olive oil

    • 2 cloves garlic (crushed)

    • Fresh rosemary or thyme

Instructions

Step 1: Bring to Room Temperature

Take lamb chops out of the fridge 15–20 minutes before cooking. This ensures even cooking.

Step 2: Season Generously

Rub chops with olive oil, salt, pepper, garlic, and herbs.

Step 3: Heat the Pan

Place a heavy pan or grill pan over high heat until very hot.

Step 4: Sear the Lamb

Add lamb chops and cook for 3–4 minutes on one side until golden and slightly charred.

Step 5: Flip and Finish

Turn the chops and cook for another 3–4 minutes depending on thickness and desired doneness.

Step 6: Rest the Meat

Remove from heat and let rest for 5 minutes to retain juices.

Step 7: Serve

Serve hot with optional lemon juice or butter.
