Jamie Oliver’s Honey Roasted Carrots is a simple roasted vegetable side dish made with carrots, honey, olive oil, salt, pepper, and optional herbs. The carrots roast until tender and slightly sticky, developing a naturally sweet and savoury glaze.
Heat your oven to 200°C (400°F). A hot oven ensures the carrots caramelise properly.
Peel the carrots and cut them into evenly sized sticks so they roast uniformly.
Place carrots on a baking tray and drizzle with honey, olive oil, salt, and pepper. Toss until fully coated.
Scatter thyme or rosemary on top for extra fragrance, or add a pinch of cumin for warmth.
Roast for 25–30 minutes, turning halfway. They should be soft inside with caramelised edges.
Stir in a small knob of butter for shine and serve warm.
