Jamie Oliver’s Hodgepodge Soup is a flexible, farm-style vegetable soup made with a mix of root vegetables, green vegetables, peas, herbs, and stock
Heat olive oil or butter in a large pot and sauté the onion, celery, and leek until softened and fragrant.
Stir in the carrots and potatoes and let them cook for a few minutes to build flavour.
Add the vegetable or chicken stock and bring the mixture to a gentle boil.
Once the root vegetables start to soften, add the peas, green beans, and any softer vegetables you’re using.
Allow the soup to simmer for 20–25 minutes until all vegetables are cooked through and flavours blend.
Stir in spinach or cabbage during the final few minutes of cooking so they soften without losing colour.
Season with salt, pepper, and a squeeze of lemon. Garnish with herbs and serve warm.
