For the Filling

    • 500g fresh spinach

    • 200g feta cheese (crumbled)

    • 1 small onion (finely chopped)

    • 2 cloves garlic (minced)

    • 3 eggs

    • 2 tablespoons olive oil

For the Pie

    • 1 sheet puff pastry or 68 sheets filo pastry

    • 1 tablespoon olive oil or melted butter for brushing

    • Parsley

    • Spring onions

    • Parmesan cheese

Instructions

Step 1: Preheat the Oven

Preheat your oven to 190°C (375°F). This temperature allows the pastry to become crisp while the filling cooks evenly.

Step 2: Cook the Onion and Garlic

Heat olive oil in a large pan over medium heat. Add the chopped onion and cook for 4–5 minutes until softened. Stir in the garlic and cook for another minute.

Step 3: Wilt the Spinach

Add the spinach gradually to the pan. Cook until wilted and most of the moisture has evaporated. This step is crucial because excess liquid can make the pie soggy.

Step 4: Cool the Filling

Transfer the spinach mixture to a bowl and allow it to cool slightly. Warm filling can affect the texture of the pastry.

Step 5: Add the Feta and Eggs

Mix the crumbled feta and eggs into the spinach mixture. Add black pepper and any optional herbs. Taste before adding salt, as feta is naturally salty.

Step 6: Prepare the Pastry

Line a pie dish or baking tin with pastry. If using filo pastry, brush each layer lightly with olive oil or melted butter.

Step 7: Fill the Pie

Spread the spinach and feta mixture evenly over the pastry base, ensuring the filling reaches all corners.

Step 8: Add the Top Layer

Cover with another layer of pastry or fold the excess pastry over the filling. Seal the edges gently.

Step 9: Brush and Bake

Brush the top with olive oil or beaten egg for a golden finish. Bake for 35–40 minutes until crisp and beautifully golden.

Step 10: Rest Before Serving

Allow the pie to cool for 10–15 minutes before slicing. This helps the filling set and makes serving easier.
