Jamie Oliver Cranberry Sauce

Jamie Oliver’s Cranberry Sauce is a festive condiment made by simmering cranberries with sugar, citrus, and optional spices until they burst and thicken into a glossy, flavourful sauce. It’s served with roast meats, sandwiches, and Christmas dinners.

Ingredients

    • 300g fresh or frozen cranberries

    • 150g sugar (adjust to taste)

    • Zest and juice of 1 orange

    • 1 cinnamon stick (optional)

    • 1 star anise (ol)

    • A splash of water

    • A pinch of salt

    • Optional: grated apple for extra sweetness

Instructions

Step 1: Prepare the Ingredients

Rinse the cranberries, zest the orange, and gather your spices so everything is ready to go.

Step 2: Combine in a Saucepan

Add cranberries, sugar, orange zest, orange juice, spices, and a splash of water into a saucepan.

Step 3: Simmer Until Cranberries Burst

Cook over medium heat for 10–12 minutes, stirring occasionally as the berries soften and burst.

Step 4: Adjust Sweetness and Texture

Taste the sauce and adjust with more sugar, citrus, or water depending on how thick you want it.

Step 5: Cool and Serve

Remove spices, let the sauce cool, and serve warm or chilled.
