Jamie Oliver Courgette Gratin

Jamie Oliver Courgette Gratin is a baked dish made by layering sliced courgettes with cream or a light béchamel sauce and cheese. It is then baked until tender inside and golden on top, creating a comforting, oven-finished vegetable dish.

    • 34 medium courgettes, thinly sliced

    • 1 tablespoon olive oil

    • 1 small onion, finely chopped

    • 2 cloves garlic, minced

    • 200ml double cream (or single cream for lighter option)

    • 80g grated cheddar or Gruyère cheese

    • 30g grated Parmesan

    • Salt and black pepper to taste

    • Optional: fresh thyme leaves

Instructions

Step 1: Preheat the Oven

Preheat your oven to 190°C (170°C fan). Lightly grease a baking dish.

Step 2: Sauté the Onion and Garlic

Heat olive oil in a pan over medium heat. Add chopped onion and cook for 3–4 minutes until soft. Stir in garlic and cook for another minute.

Step 3: Add the Courgettes

Add sliced courgettes to the pan and cook for 5–6 minutes until slightly softened. Season with salt and pepper.

Step 4: Add Cream

Pour in the cream and allow it to simmer gently for 2–3 minutes so flavors combine.

Step 5: Transfer to Baking Dish

Spoon the mixture into the prepared dish. Sprinkle grated cheddar or Gruyère evenly on top, followed by Parmesan.

Step 6: Bake

Bake for 25–30 minutes until golden and bubbling. The top should be lightly crisp.

Step 7: Rest Before Serving

Let the gratin rest for 5 minutes before serving. This helps it set slightly.
