Jamie Oliver Chocolate and Banana Cake

Jamie Oliver Chocolate and Banana Cake is a moist chocolate cake made with ripe mashed bananas, cocoa powder, flour, eggs, butter, and sugar. The bananas provide sweetness and moisture, while chocolate adds richness and depth.

For the Cake

  • 3 large ripe bananas, mashed
  • 200g plain flour
  • 40g unsweetened cocoa powder
  • 150g caster sugar
  • 125g unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 100g dark chocolate chips or chopped dark chocolate
  • Pinch of salt

Optional Ingredients

  • 75g chopped walnuts
  • 75g chopped pecans
  • 1 teaspoon ground cinnamon
  • 2 tablespoons Greek yogurt
  • 1 tablespoon espresso or strong coffee
  • Chocolate chunks for the top

For an Optional Chocolate Topping

  • 100g dark or milk chocolate
  • 50ml double cream

Instructions

Step 1: Preheat the Oven

Preheat your oven to 180°C (350°F). Grease and line a 20cm round cake tin or a 2lb loaf tin with baking paper.

Step 2: Mash the Bananas

Peel the ripe bananas and place them in a large mixing bowl. Mash them with a fork until mostly smooth, leaving a few small pieces for extra texture.

Step 3: Cream the Butter and Sugar

In another bowl, beat the softened butter and caster sugar together until pale and fluffy. This helps incorporate air into the batter and contributes to a lighter cake.

Step 4: Add the Eggs

Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

If the mixture looks slightly curdled, don’t worry. It will come together once the dry ingredients are added.

Step 5: Add the Bananas

Stir the mashed bananas into the wet mixture until evenly distributed. Avoid overmixing at this stage.

Step 6: Combine the Dry Ingredients

In a separate bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.

Step 7: Fold Everything Together

Gradually fold the dry ingredients into the banana mixture using a spatula. Mix only until no large streaks of flour remain.

Step 8: Add the Chocolate

Fold in the chocolate chips or chopped dark chocolate. If using nuts, add them at this stage as well.

Step 9: Transfer to the Tin

Pour the batter into the prepared cake tin and smooth the surface. Sprinkle a few extra chocolate chips over the top if desired.

Step 10: Bake the Cake

Bake for approximately 45–55 minutes, or until a skewer inserted into the center comes out with a few moist crumbs but no wet batter.

Step 11: Cool the Cake

Leave the cake in the tin for 10–15 minutes before transferring it to a wire rack. Allow it to cool completely before adding any chocolate topping.

Step 12: Add the Optional Chocolate Topping

If using the topping, gently heat the chocolate and double cream together until smooth. Allow it to cool slightly before spreading over the cake.
