Jamie Oliver’s chicken tray bake is an oven-roasted dish where chicken pieces and vegetables are seasoned, arranged on a single tray, and cooked together.
The method allows flavours to mingle while keeping the cooking process simple and efficient.
Preheat the oven to 200°C (180°C fan). Use a large roasting tray so the ingredients sit in a single layer and roast evenly.
Add the potatoes, red onions, and garlic to the tray. Drizzle with olive oil, season with salt and black pepper, and toss well to coat everything evenly.
Place the chicken pieces on top of the vegetables, skin-side up. Rub the skin lightly with olive oil and season generously.
Scatter fresh herbs over the tray and tuck the lemon halves among the chicken and vegetables. The lemon juices release as they roast, adding freshness.
Place the tray in the oven and roast for 45–50 minutes, turning the vegetables halfway through. The chicken should be golden, and the potatoes tender.
Remove the tray from the oven and let it rest for 5 minutes. This helps the juices settle before serving.
