Jamie Oliver’s chicken tikka masala is a curry made by marinating chicken in yogurt and spices, then cooking it in a creamy tomato-based sauce with aromatic spices, creating a rich and flavorful dish.
Optional additions:
In a bowl, mix yoghurt, ginger-garlic, spices, and salt. Add chicken pieces and coat well. Let it marinate for at least 20–30 minutes (longer for deeper flavor).
Heat a pan with a little oil and cook the marinated chicken until lightly charred and cooked through. Set aside.
In the same pan, heat oil or butter. Add chopped onion and cook until soft and golden.
Stir in garlic and ginger, cooking until fragrant.
Add curry paste or spice mix and cook briefly to release flavors.
Add chopped tomatoes and cook for 8–10 minutes until thickened.
Pour in cream and mix well to create a rich sauce.
Add cooked chicken back into the pan and simmer for 10–15 minutes.
Garnish with fresh coriander and serve hot.
