Jamie Oliver Chicken Mustard

Jamie Oliver’s chicken mustard is a dish where chicken is pan-cooked and served with a creamy mustard sauce, often made with cream, stock, and herbs for a rich and tangy finish.

Ingredients

  • 4 chicken breasts or thighs
  • 2 tablespoons Dijon mustard
  • 1 tablespoon wholegrain mustard
  • 200ml cream
  • 100ml chicken stock
  • 1 onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • Fresh thyme or parsley
  • Salt and pepper (to taste)

Optional additions:

  • Mushrooms
  • Lemon juice

Instructions

Step 1: Season the Chicken

Season chicken with salt and pepper.

Step 2: Sear the Chicken

Heat olive oil in a pan over medium heat. Cook chicken until golden on both sides. Remove and set aside.

Step 3: Cook the Base

In the same pan, add the onion and cook until softened. Stir in garlic.

Step 4: Add Mustard

Add Dijon and wholegrain mustard, stirring to combine with the onions.

Step 5: Build the Sauce

Pour in chicken stock and cream, stirring until smooth.

Step 6: Return Chicken

Add chicken back to the pan and simmer for 10–15 minutes until fully cooked.

Step 7: Finish and Garnish

Sprinkle fresh herbs and adjust seasoning before serving.
