Jamie Oliver’s Chicken Casserole and Dumplings is a slow-simmered chicken and vegetable stew topped with soft, fluffy dumplings that steam to perfection. It’s a traditional comfort dish with rich broth, tender meat, and pillowy dumplings.

For the casserole

    • 6 chicken thighs (bone-in or boneless)

    • 2 onions, chopped

    • 3 carrots, sliced

    • 2 celery sticks, sliced

    • 3 garlic cloves, minced

    • 2 potatoes, diced

    • 4 cups chicken stock

    • 2 tbsp olive oil or butter

    • 1 tsp thyme or mixed herbs

    • Salt and pepper to taste

For the dumplings

    • 1 ½ cups self-raising flour

    • ¾ cup milk

    • 2 tbsp butter

    • Pinch of salt

    • Optional: fresh herbs, grated cheese

Instructions

Step 1: Brown the chicken

Sear the chicken thighs in oil until golden. This adds richness and flavour to the casserole base.

Step 2: Sauté onions, garlic, and vegetables

Cook until softened to build depth and sweetness.

Step 3: Add potatoes and stock

Stir well and bring the mixture to a simmer so everything cooks evenly.

Step 4: Simmer the casserole

Let it cook for 25–30 minutes until the chicken is tender and the vegetables soften.

Step 5: Make the dumpling mixture

Combine flour, butter, milk, and salt to create a soft, sticky dough.

Step 6: Add dumplings to the casserole

Drop spoonfuls of dough on the surface, leaving space between each one.

Step 7: Cover and cook

Simmer with the lid on for 15–20 minutes until dumplings are fluffy and cooked through.

Step 8: Serve warm

Sprinkle with herbs and enjoy a cosy, satisfying meal.
