Jamie Oliver’s cheesy vegetables bake is a dish where mixed vegetables are cooked and combined with a creamy cheese sauce, then baked until golden and bubbling.
Optional additions:
Preheat your oven to 180°C (350°F).
Lightly boil or steam vegetables for 5–7 minutes until just tender. Drain and set aside.
Heat olive oil in a pan and sauté onion until soft, then add garlic.
In another pan, melt butter, add flour, and cook for 1 minute. Gradually whisk in milk to create a smooth sauce.
Stir in grated cheese until melted and smooth. Season to taste.
Mix vegetables with the cheese sauce and sautéed onions.
Transfer to a baking dish, sprinkle extra cheese or breadcrumbs on top.
Bake for 25–30 minutes until golden and bubbling.
