Jamie Oliver’s cheese straws are strips of puff pastry topped or filled with cheese and seasoning, twisted or shaped into straws, then baked until golden and crisp.
Optional additions:
Preheat your oven to 200°C (400°F). High heat helps the puff pastry rise properly and become crisp.
Roll out the puff pastry slightly on a lightly floured surface if needed. Keep it cold for best results.
Sprinkle grated cheese evenly over the pastry. Add black pepper, herbs, or spices if using. Lightly press the toppings into the pastry.
You can either fold the pastry in half and cut strips, or cut strips directly and twist them gently to create the classic straw shape.
Place the cheese straws on a lined baking tray, leaving space between them for puffing.
Brush lightly with beaten egg to help create a glossy, golden finish.
Bake for 12–15 minutes until puffed, crisp, and deeply golden around the edges.
Allow the cheese straws to cool for a few minutes so they crisp up fully.
