Instructions

Step 1: Melt the Butter

Place a saucepan over medium heat and melt the butter gently. Avoid browning it, as you want a smooth and neutral base for the sauce.

Step 2: Add the Flour

Stir in the flour and cook for 1–2 minutes while stirring continuously. This creates a roux, which thickens the sauce and removes the raw flour taste.

Step 3: Add the Milk Gradually

Slowly pour in the milk while whisking constantly. Adding it gradually helps prevent lumps and creates a smooth consistency.

Step 4: Cook Until Thickened

Continue stirring over medium heat until the sauce thickens slightly. It should coat the back of a spoon without becoming overly heavy.

Step 5: Add the Cheese

Reduce the heat and stir in the grated cheese gradually. Mix until fully melted and smooth.

Step 6: Season the Sauce

Add salt, black pepper, and optional mustard or nutmeg to enhance flavor. Taste and adjust as needed.

Step 7: Serve Immediately

Use the sauce while hot for the smoothest texture and best flavor.
