Jamie Oliver’s Celery Soup is a silky blended vegetable soup made primarily from celery, onions, garlic, potatoes, and vegetable stock. It highlights the natural sweetness of celery and delivers a smooth, comforting result with minimal effort.

    • 1 large bunch of celery, chopped

    • 1 onion, diced

    • 2 garlic cloves, minced

    • 2 medium potatoes, peeled and diced

    • 4 cups vegetable stock

    • 2 tbsp olive oil or butter

    • ½ cup cream or milk (optional)

    • Fresh parsley or thyme

    • Salt and pepper to taste

Instructions

Step 1: Sauté onions and garlic

Cook in oil until soft and fragrant to build flavour.

Step 2: Add celery and potatoes

Stir well and cook for a few minutes to soften the vegetables.

Step 3: Pour in vegetable stock

Bring to a gentle simmer so the vegetables cook evenly.

Step 4: Simmer until tender

Cook for 15–20 minutes until potatoes and celery are soft enough to blend.

Step 5: Blend the soup until smooth

Use a hand blender or jug blender to create a velvety texture.

Step 6: Stir in cream if using

Add richness and balance to the fresh celery flavour.

Step 7: Adjust seasoning and serve warm

Finish with herbs, pepper, or a drizzle of olive oil.
