    • 1 large cauliflower, cut into florets

    • 23 tablespoons olive oil

    • 2 cloves garlic, crushed

    • 1 teaspoon paprika

    • 1 teaspoon dried thyme or oregano

    • 1 lemon (zest + juice)

    • Salt and pepper to taste

    • Optional: Grated Parmesan, cherry tomatoes, or chickpeas

Instructions

1. Preheat the Oven

Set your oven to 200°C (400°F) so it’s hot enough to crisp the cauliflower.

2. Prepare the Cauliflower

Cut the cauliflower into even florets and place them on a baking tray.

3. Season Generously

Drizzle with olive oil, add garlic, herbs, paprika, salt, and pepper, then toss to coat all the pieces evenly.

4. Add Optional Ingredients

If using cherry tomatoes, chickpeas, or Parmesan, add them now for extra flavour and texture.

5. Roast Until Golden

Bake for 30–35 minutes, tossing halfway through, until the cauliflower is tender and slightly crisp around the edges.
