  • 1 medium cauliflower (cut into florets)
  • 1 can (400g) chickpeas (drained and rinsed)
  • 1 onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon ginger (grated)
  • 2 tablespoons curry paste or powder
  • 1 can (400g) chopped tomatoes
  • 200ml coconut milk
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)

Optional additions:

  • Fresh coriander (for garnish)
  • Chili flakes (for heat)
  • Spinach (for extra greens)

Instructions

Step 1: Prepare the Base

Heat olive oil in a large pan over medium heat. Add chopped onion and cook until soft and translucent.

Step 2: Add Aromatics

Stir in garlic and ginger. Cook for 1–2 minutes until fragrant.

Step 3: Add Spices

Add curry paste or powder and cook briefly to release flavors.

Step 4: Add Vegetables and Chickpeas

Add cauliflower florets and chickpeas, stirring to coat them in the spice mixture.

Step 5: Build the Sauce

Pour in chopped tomatoes and coconut milk. Mix well.

Step 6: Simmer

Cover and let the curry simmer for 20–25 minutes until the cauliflower is tender.

Step 7: Adjust Seasoning

Season with salt, pepper, and chili flakes if desired.

Step 8: Garnish and Serve

Top with fresh coriander and serve hot.
