Jamie Oliver’s cauliflower and broccoli cheese is a dish where vegetables are cooked and combined with a creamy cheese sauce, often baked until golden and bubbling.

  • 1 head broccoli (cut into florets)
  • 2 tablespoons butter or olive oil
  • 2 tablespoons flour
  • 500ml milk
  • 150g grated cheese (cheddar or mix)
  • Salt and black pepper (to taste)

  • Mustard (for depth of flavor)
  • Parmesan cheese
  • Breadcrumbs for topping
  • Nutmeg

Instructions

Step 1: Preheat the Oven and Prepare Vegetables

Preheat your oven to 180°C (350°F). Cut cauliflower and broccoli into evenly sized florets so they cook at the same rate and maintain a consistent texture.

Step 2: Cook the Vegetables

Bring a pot of salted water to a boil and cook the cauliflower and broccoli for 4–5 minutes until just tender. Drain well and set aside—avoid overcooking as they will cook further in the oven.

Step 3: Make the Cheese Sauce Base

In a pan, melt butter over medium heat and stir in flour to form a paste. Cook briefly, then gradually whisk in milk to create a smooth, lump-free sauce.

Step 4: Add Cheese and Seasoning

Add grated cheese and stir until melted. Season with salt, pepper, and optional mustard or nutmeg to enhance flavor.

Step 5: Combine and Assemble

Place the cooked vegetables in a baking dish and pour the cheese sauce over them, ensuring everything is evenly coated.

Step 6: Add Topping (Optional)

Sprinkle extra cheese or breadcrumbs on top for a golden, crispy finish.

Step 7: Bake Until Golden

Bake for 15–20 minutes until bubbling and lightly golden on top.
