For the Cake

    • 250 g plain flour

    • 200 g brown sugar

    • 150 ml vegetable oil

    • 3 eggs

    • 250 g grated carrots

    • 1 teaspoon cinnamon

    • ½ teaspoon nutmeg

    • 2 teaspoons baking powder

    • 1 teaspoon baking soda

    • 1 teaspoon vanilla extract

    • 100 g chopped walnuts or pecans (optional)

For the Frosting

    • 200 g cream cheese

    • 100 g butter, softened

    • 150 g icing sugar

    • 1 teaspoon vanilla extract

Instructions

Step 1 – Preheat and Prepare

Preheat your oven to 180°C (350°F). Grease and line a cake tin.

Step 2 – Mix Wet Ingredients

In a bowl, whisk together the eggs, sugar, oil, and vanilla extract until smooth.

Step 3 – Add Dry Ingredients

Sift in the flour, baking powder, baking soda, cinnamon, and nutmeg. Mix gently until combined.

Step 4 – Add Carrots and Nuts

Fold in the grated carrots and chopped nuts. Stir until evenly distributed.

Step 5 – Bake the Cake

Pour the batter into the prepared tin and bake for 30–35 minutes until a skewer comes out clean. Let it cool completely.

Step 6 – Prepare the Frosting

Beat the cream cheese, butter, icing sugar, and vanilla until smooth and creamy.

Step 7 – Assemble the Cake

Spread the frosting evenly over the cooled cake. You can decorate with extra nuts if desired.

Step 8 – Slice and Serve

Cut into slices and serve.
