Jamie Oliver Carrot and Celery Soup

Jamie Oliver’s Carrot and Celery Soup is a smooth vegetable soup made by simmering carrots and celery with aromatics, then blending until creamy.

The result is a light, velvety soup with a naturally sweet and fresh flavor.

You’ll need the following ingredients:

    • 4 carrots, peeled and chopped

    • 3 celery stalks, chopped

    • 1 onion, chopped

    • 2 garlic cloves, minced

    • 2 tablespoons olive oil

    • 1 liter vegetable stock

    • Salt and black pepper to taste

    • 1 teaspoon fresh thyme or parsley

    • Juice of ½ lemon (optional)

Instructions

Step 1 – Prepare the Vegetables

Chop the carrots, celery, and onion into small pieces for even cooking.

Step 2 – Cook the Base

Heat olive oil in a large pot over medium heat. Add the onion and cook for 3–4 minutes until softened. Stir in the garlic and cook for another minute.

Step 3 – Add Carrots and Celery

Add the chopped carrots and celery. Cook for 5 minutes, stirring occasionally.

Step 4 – Add Stock

Pour in the vegetable stock and bring to a boil. Then reduce the heat and simmer for 15–20 minutes until the vegetables are soft.

Step 5 – Blend the Soup

Use a hand blender (or regular blender) to blend the soup until smooth and creamy.

Step 6 – Season and Finish

Season with salt, pepper, herbs, and lemon juice if using. Stir well.

Step 7 – Serve

Serve hot with a drizzle of olive oil or fresh herbs.
