The Jamie Oliver Caramelised Onion and Goat’s Cheese Tart is an oven-baked pastry tart topped with slow caramelised onions and soft goat’s cheese. The onions are cooked slowly to release natural sugars, creating depth without complicated ingredients.

    • 1 sheet ready-rolled puff pastry

    • 3 large onions (thinly sliced)

    • 150 g goat’s cheese

    • 2 tbsp olive oil

    • 1 tsp balsamic vinegar

    • 1 tsp thyme (fresh or dried)

    • Salt and black pepper

Optional:

    • Honey drizzle

    • Rocket leaves for serving

Instructions

Step 1: Caramelise the Onions

    1. Heat olive oil in a wide pan on low heat.

    1. Add sliced onions and salt.

    1. Cook slowly 20–25 minutes, stirring occasionally.

They should turn deep golden and soft — not browned quickly.

Step 2: Add Flavour

    1. Stir in balsamic vinegar.

    1. Add thyme and pepper.

    1. Cook 2 more minutes.

This builds sweetness and aroma.

Step 3: Prepare the Pastry

    1. Preheat oven to 200°C.

    1. Place pastry on baking tray.

    1. Score a 1 cm border around edges (don’t cut through).

    1. Prick the centre with fork.

Helps edges rise while centre stays flat.

Step 4: Assemble

    1. Spread caramelised onions inside border.

    1. Crumble goat’s cheese over top.

Step 5: Bake

    1. Bake 20–25 minutes.

    1. Edges should puff and turn golden.

Step 6: Finish

    1. Rest 5 minutes.

    1. Optional honey drizzle and herbs.

    1. Slice and serve.
