Jamie Oliver Caprese Chicken Burgers are chicken burgers topped with the ingredients traditionally associated with Caprese salad: fresh tomato, mozzarella, basil, and balsamic.
The chicken patties are seasoned and pan-seared until golden and cooked through. They are then topped with mozzarella so it softens and begins to melt before being placed inside toasted burger buns with fresh tomatoes, basil, and balsamic dressing.
Place the minced chicken in a large mixing bowl.
Add the grated garlic, oregano, dried basil, Parmesan, breadcrumbs, egg, salt, and black pepper.
Mix gently with your hands until everything is evenly combined.
Avoid overmixing because it can make the burgers dense.
Divide the mixture into 4 equal portions.
Shape each portion into a burger patty approximately 1.5–2cm thick.
Press a small indentation into the center of each patty with your thumb. This helps the burgers maintain their shape while cooking.
Slice the tomatoes into thick rounds.
Slice the mozzarella into approximately 4 equal portions.
Pick the basil leaves from their stems and set them aside.
Combine the balsamic vinegar and extra virgin olive oil in a small bowl.
Add a little freshly ground black pepper and whisk together.
Place a large frying pan or grill pan over medium heat.
Add the olive oil and allow it to heat.
Place the chicken patties into the hot pan.
Cook for approximately 5–6 minutes on each side, depending on their thickness.
Don’t press down on the patties while cooking because this can release their juices.
Use a food thermometer to check the center of the thickest patty.
Ground chicken should reach 74°C (165°F) for safe consumption.
During the final 1–2 minutes of cooking, place a slice of fresh mozzarella on each chicken patty.
Cover the pan with a lid if necessary to help the mozzarella soften.
While the chicken finishes cooking, slice the burger buns in half.
Toast the cut sides in a dry frying pan or under the grill until lightly golden.
Spread pesto over the bottom half of each toasted bun if using.
Add rocket leaves, followed by the cooked chicken patty and melted mozzarella.
Place fresh tomato slices over the mozzarella.
Scatter fresh basil leaves over the top.
Drizzle a small amount of the balsamic dressing over the tomatoes and basil.
Don’t add too much because excess liquid can make the bun soggy.
Place the top bun over the filling.
Serve immediately while the chicken and mozzarella are warm.
