Jamie Oliver Butter Bean Mash

Butter bean mash is a smooth purée made by gently heating butter beans and blending them with olive oil, garlic, and seasoning. The beans break down easily, creating a rich, velvety texture that feels indulgent while staying simple and wholesome.

  • 2 x 400 g tins butter beans, drained and rinsed
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, finely chopped
  • Juice of ½ lemon
  • Salt and freshly ground black pepper
  • Optional: fresh rosemary, thyme, or parsley

Instructions

Step 1: Warm the beans

Place the drained butter beans in a saucepan with a splash of water. Warm gently over medium heat for 4–5 minutes, just until heated through. This helps them blend smoothly later.

Step 2: Cook the garlic

Add the olive oil and chopped garlic to the pan. Cook gently for 1–2 minutes, stirring constantly. The garlic should soften and become fragrant, not brown.

Step 3: Mash or blend

Remove the pan from the heat. Use a potato masher for a rustic texture, or a hand blender for a smoother mash. Blend until the beans are creamy but still hold some body.

Step 4: Season and brighten

Add the lemon juice, salt, and black pepper. Taste and adjust seasoning. The lemon lifts the richness and keeps the mash tasting fresh.

Step 5: Finish with herbs

Stir in finely chopped herbs if using. This adds aroma and a gentle layer of flavour without overpowering the beans.

Step 6: Serve warm

Serve the mash immediately while warm and smooth. Drizzle with a little extra olive oil if you like.
