Instructions

Step 1 – Prepare the Leeks

Wash and slice the leeks thoroughly to remove any dirt. Leeks often trap soil between layers, so clean them carefully.

Step 2 – Cook the Leeks

Heat olive oil in a pan over medium heat. Add the leeks and cook for 5–7 minutes until soft and slightly sweet.

Step 3 – Add Garlic

Stir in the garlic and cook for about 1 minute until fragrant.

Step 4 – Add Butter Beans

Add the butter beans to the pan and mix gently with the leeks.

Step 5 – Pour in Stock

Add the vegetable stock and bring the mixture to a gentle simmer.

Step 6 – Add Cream (Optional)

Stir in cream or crème fraîche for extra richness, if desired.

Step 7 – Simmer and Finish

Let the dish simmer for 8–10 minutes until slightly thickened. Add lemon juice, herbs, salt, and pepper before serving.
