Jamie Oliver Broccoli Pasta

Jamie Oliver’s broccoli pasta is a simple pasta dish where broccoli is cooked and mashed or blended into a light sauce, then tossed with pasta, garlic, and olive oil for a creamy, comforting finish.

Ingredients

    • 300g pasta (penne, fusilli, or spaghetti)

    • 1 large head broccoli (cut into florets)

    • 2 cloves garlic (sliced or minced)

    • 3 tablespoons olive oil

    • 40g grated parmesan cheese

    • Salt and black pepper (to taste)

Optional additions:

    • Chili flakes

    • Lemon zest

    • Anchovies

    • Spinach or peas

Instructions

Step 1: Boil the Pasta and Broccoli

Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions. In the last 3–4 minutes, add broccoli florets to the same pot.

Step 2: Reserve Pasta Water

Before draining, reserve about 1 cup of pasta cooking water.

Step 3: Sauté Garlic

In a large pan, heat olive oil over medium heat. Add garlic and cook gently until fragrant (not browned).

Step 4: Mash or Blend Broccoli

Drain the pasta and broccoli. Lightly mash the broccoli with a fork or blend part of it for a smoother texture.

Step 5: Combine Everything

Add pasta and broccoli to the pan with garlic. Toss well.

Step 6: Create the Sauce

Add a splash of reserved pasta water and stir until a silky sauce forms.

Step 7: Add Cheese and Seasoning

Stir in parmesan, salt, pepper, and optional chili flakes or lemon zest.

Step 8: Serve

Serve immediately while warm and creamy.
