Jamie Oliver Blackberry Coulis

Jamie Oliver’s blackberry coulis is a smooth fruit sauce made by cooking blackberries with sugar and then blending and straining the mixture to achieve a silky texture.

  • 250g fresh or frozen blackberries
  • 23 tablespoons sugar (adjust to taste)
  • 12 tablespoons water
  • 1 teaspoon lemon juice

Optional additions:

  • Vanilla extract
  • Honey instead of sugar

Instructions

Step 1: Cook the Blackberries

Add blackberries, sugar, and water to a saucepan. Cook over medium heat for 5–7 minutes until the berries soften and release juice.

Step 2: Blend the Mixture

Remove from heat and blend until smooth using a blender or hand blender.

Step 3: Strain the Sauce

Pass the mixture through a fine sieve to remove seeds, creating a smooth coulis.

Step 4: Add Lemon Juice

Stir in lemon juice to balance sweetness and enhance flavor.

Step 5: Cool and Serve

Let it cool before serving or storing.
