Jamie Oliver Banana Muffins are soft, cake-style muffins made with mashed ripe bananas, flour, eggs, and oil or butter. The bananas add moisture and natural sweetness, creating a tender, flavorful bake.

Dry Ingredients

    • 250g self-raising flour

    • 100g caster sugar

    • ½ teaspoon baking powder

    • Pinch of salt

Wet Ingredients

    • 2 ripe bananas, mashed

    • 2 large eggs

    • 100ml vegetable oil (or melted butter)

    • 100ml milk

    • 1 teaspoon vanilla extract

Optional Add-Ins

    • 50g chopped walnuts

    • 80g chocolate chips

Instructions

Step 1: Preheat the Oven

Preheat oven to 180°C (160°C fan). Line a muffin tray with paper cases.

Step 2: Mix Dry Ingredients

In a large bowl, combine flour, sugar, baking powder, and salt. Stir lightly to distribute evenly.

Step 3: Combine Wet Ingredients

In another bowl, whisk mashed bananas, eggs, oil (or melted butter), milk, and vanilla extract until smooth.

Step 4: Make the Batter

Pour the wet mixture into the dry ingredients. Fold gently with a spatula until just combined. Avoid overmixing.

Step 5: Add Optional Ingredients

Fold in walnuts or chocolate chips if using.

Step 6: Fill Muffin Cases

Divide batter evenly among muffin cases, filling each about ¾ full.

Step 7: Bake

Bake for 18–22 minutes until golden and a toothpick inserted into the center comes out clean.

Step 8: Cool

Allow muffins to cool in the tray for 5 minutes before transferring to a wire rack.
