Jamie Oliver’s banana and almond cake is a soft, moist cake made with ripe bananas and ground almonds, often combined with flour and eggs to create a balanced, slightly dense yet tender texture. It’s known for its natural sweetness and nutty richness.

    • 3 ripe bananas (mashed)

    • 150g ground almonds (almond meal)

    • 100g plain flour

    • 150g sugar (brown or caster)

    • 2 large eggs

    • 100g melted butter or olive oil

    • 1 teaspoon baking powder

    • 1 teaspoon vanilla extract

    • Pinch of salt

Optional add-ins:

    • Sliced almonds (for topping)

    • Honey drizzle

    • Cinnamon (½ teaspoon)

Instructions

Step 1: Preheat and Prepare

Preheat your oven to 180°C (350°F). Grease and line a cake tin.

Step 2: Mash the Bananas

Mash the bananas in a bowl until mostly smooth, keeping a few small lumps for texture.

Step 3: Mix Wet Ingredients

Add eggs, sugar, melted butter (or oil), and vanilla extract. Whisk until well combined.

Step 4: Combine Dry Ingredients

In another bowl, mix ground almonds, flour, baking powder, and salt.

Step 5: Combine Mixtures

Fold the dry ingredients into the wet mixture gently until just combined.

Step 6: Add Toppings

Pour the batter into the tin and sprinkle sliced almonds on top if using.

Step 7: Bake

Bake for 40–50 minutes, or until a skewer inserted in the center comes out clean.

Step 8: Cool and Serve

Let the cake cool before slicing. Optionally drizzle with honey before serving.
