Jamie Oliver’s apple and pear crumble is a baked dessert made with a layer of cooked apples and pears topped with a buttery crumble mixture and baked until golden and crisp.

For the Fruit Filling

    • 4 apples (peeled, cored, and sliced)

    • 3 pears (peeled, cored, and sliced)

    • 75g brown sugar

    • 1 teaspoon cinnamon

    • 1 tablespoon lemon juice

For the Crumble Topping

    • 150g plain flour

    • 100g cold butter (cubed)

    • 75g brown sugar

Optional additions:

    • Oats

    • Chopped walnuts or pecans

    • Nutmeg

    • Vanilla extract

Instructions

Step 1: Preheat the Oven

Preheat your oven to 180°C (350°F). This temperature allows the fruit to soften while the topping becomes golden and crisp.

Step 2: Prepare the Fruit

Peel, core, and slice the apples and pears into evenly sized pieces. Similar-sized slices help the fruit cook evenly.

Step 3: Make the Fruit Filling

Place the apples and pears in a large bowl. Add brown sugar, cinnamon, and lemon juice, then toss gently until evenly coated.

Step 4: Transfer the Filling to a Baking Dish

Spread the fruit mixture evenly in a medium-sized baking dish, ensuring an even layer.

Step 5: Prepare the Crumble Topping

Place the flour and butter in a bowl. Rub the butter into the flour using your fingertips until the mixture resembles coarse breadcrumbs.

Step 6: Add Sugar

Stir the brown sugar into the crumble mixture. If using oats or nuts, add them at this stage.

Step 7: Cover the Fruit

Sprinkle the crumble mixture evenly over the fruit. Avoid pressing it down too firmly so it remains light and crisp.

Step 8: Bake Until Golden

Bake for 35–40 minutes until the topping is golden brown and the fruit is bubbling around the edges.

Step 9: Allow to Cool Slightly

Let the crumble rest for 10 minutes before serving. This helps the fruit filling settle and improves texture.
